At the 2022 International Baking Industry Expo, Cargill showcased its commitment to the baking industry with new solutions that deliver enhanced functionality and address prevailing consumer trends in personal and planetary health. .

New product-related announcements targeted bakery staples, with an expanded range of icing fats. Advantages shown include a creamier texture, greater range of plasticity and wider temperature tolerance.

“A lot of frostings are stored in cold temperatures, which makes them difficult to spread,” said Jamie Mavec, marketing manager, global edible oil solutions for Cargill. “Our PalmAgility 507 and PalmAgility 516 icing shortenings offer a creamier texture and limited temperature range, making them much better for cake decorators.”

Like all products in the PalmAgility bakery shortening line, PalmAgility 507 and PalmAgility 516 icing shortenings have been developed to achieve consistent and reliable performance over a wide temperature range. PalmAgility 507 is specially formulated for ready-to-use glazes that are essential to fresh bakery outlets, while PalmAgility 516 performs well in a variety of applications, including those requiring freeze-thaw tolerance.

Compared to standard palm-based shortenings, these products have a creamier texture, reduced brittleness, and wider plasticity range, resulting in smooth, spreadable frostings that are easy to use, even when the frosting has been stored cold. .

Indulgence is king

Courtney LeDrew, marketing manager for Cargill Starches, Sweeteners and Texturizers, points out that “indulgence is king, but consumers really want less sugar.”

Cargill also revealed significant gains on the sustainability front, adding RSPO-certified separated palm olein and palm stearin to its North American portfolio. With this announcement, the company becomes one of the first palm oil suppliers to offer a full range of RSPO-certified separate products. RSPO segregated products provide customers with greater assurance and transparency as there is no mixing – they are segregated from commodity palm oil supplies, traceable through the supply chain and produced according to criteria established by the RSPO.

In connection with the company’s palm oil sustainability efforts, Cargill’s PalmWise sustainability monitoring and traceability data platform has been recognized as a finalist in the Sustainability Award category of the BEST in Baking 2022 program. Updated quarterly, PalmWise offers customers a window into their specific supply chain, giving them easy access to sustainability data relevant to their palm oil purchases, including details traceability and sustainability performance.
